Cuisine
The cuisine of Sunshine Cove is a modern fusion of global cuisines that were brought on by the city's diverse population. The city is known for its spice balls, a food item that is popular among late night bar crawlers. The dish features tempura battered boneless skin-on chicken thigh segments that are then tossed in a dry mix of salt, pepper, diced bell and jalapeno peppers, and other spices. The dish was created by a local chinese take out establishment in West Cove, Joe's Chinese Shack in the 1970s as a modern crispy, boneless take on chinese salt and pepper chicken wings. One landmark that showcases the city's diverse food scene is the Downtown Food Commons (DOFCO), a food hall located in the upper part of Downtown Sunshine Cove features seven unique food stalls. The food hall was established in 2007 after the conversion of an old bus terminal of a park and ride facility that was closed in 1983 after RapidLink Metro was built to Hope/CMU station. The park and ride facility was originally established for Downtown Sunshine Cove workers and visitors to park and ride a shuttle around Downtown to help ease parking issues Downtown, but this was solved when the RapidLink Metro was built. The facility was then converted to a normal parking garage for the Convention Center and the neighboring area. A group of investors saw the empty piece of space below the parking garage in 2003 and decided to work with the city to convert the empty old bus staging area into a food hall that would serve visitors to the area.
